How do you know if your romance is "romance-y" enough? ? And do your couples have a special couple 'thing?' (movie, song, date event, etc.)

I tend to write more slow burn romances. That said, I have a few slightly more fast-paced romances I'm working on right now, but my romances rarely revolve around the characters becoming a couple in just a few dates. I'm currently working on one of my first romances where this is the case, and while it wasn't tricky for me, to plot-point it out so far, it is definitely a very different way of writing.
I think with fast paced romances you have to focus a lot more on the details and nuances that make the plot itself stand out because you have less time to get to know the characters if you don't show a lot in the short space of time. Obviously, since we usually don't want to write tons of exposition, the way to do that would be through all the little subtleties we can write to hint at the things that will never explicitly be said. But that takes quite a lot of attention to details.
