When posting on both Tapas and Webtoon, do I publish different comics on both sites?

I don't think that's necessary! The audience for Webtoon and Tapas are different, so it's totally fine and normal to cross-post the exact same comic on both sites.

Posting different episodes might quickly get confusing for you and you’ll need to have a neat tracking. If readers are segmented already, as mentioned by @CorissaBees, then there’s probably no reasons to post different episodes.
Me I post same episodes at the same time on Tapas and my own website.
