Yes that's fine! As long as the characters are your own and it fits the theme, and is a stand-alone story of course, that's completely a-okay!
We've had a couple of artists in the last anthology as well who used their characters as well.

Oh I am an avid tea drinker, and there is a divide at work between us tea sipper and the coffee horde. Definitely have lots of tea related stories. Looking forward to pitching, and thank you for giving Artist an opportunity to be part of something like this.
