Honey with grilled cheese works better if there's a bitterness to the cheese.
I suggest gorgonzola, or maybe even emmental to be added in the mix if you want bitterness.
Trust me, the mix of cheeses is essential for the perfect grilled cheese. Don't just put them haphazardly left and right. You gotta find which ones blend in the most, ya know?
(And also, don't mind me. I'm a little bit too much of a grilled cheese nerd.)
