For complicated shots and anything in a first-person perspective, I strongly recommend using a 3D model of some sort. I personally use DesignDoll by Terawell, because it's free and has some spectacular body type & camera customization (including a first-person view!). Some art programs also come with their own models, but I use good ol' Paint Tool SAI 1.0, so I wouldn't be able to make recommendations about those.
Another thing you could do is just rethink the shot a bit-- if you struggle with a first-person view but still want something close, consider having your "camera" positioned above her shoulder, looking down at her. If your reader already has an idea of where the character is via an establishing shot of some sort, you could even opt for some smaller detail shots to emphasize what your character is focusing on. Play around with some ideas that are fun and challenging, but not excessively frustrating for you!
