I hope you don't mind me taking the liberty to answer your questions:
-Aligning text to centre: basically, position the text in a way so that they're symmetrical on both sides, rather than flushed to one side. Let me give you an example:
See the difference? Sure, there's nothing wrong with left alignment text, but it just looks much neater when you align it in the centre.
-Different fonts: Ehhh...I don't think this is a good idea. Too many different fonts may lead to confusion instead of interesting format. I suggest you rather decide on maybe three-four default fonts, then switch between them according to the mood of the character (normal, ecstatic, furious, and sad).
I'll still stick to the 'normal' font for most of the time though, and use the more 'unique' fonts very sparingly.
