i think my issue with covers of that variety, even when it's just photos of regular people, is that they start to look generic or repetitive. it's one of the reasons that some romance stories, for example, don't often grab me but if the characters look visually interesting enough or the pairing is uncommon (like i'm a big monster fan) then maybe it'll have a higher chance
in the same vein fantasy covers that really highlight their characters within the genre and make them genuinely look interesting with some dynamic scene from the story happening or they just look cool then i or any other random reader may be more likely to click
i think that's why as much as i get the push for having characters on the cover page as common advice one things that's often left out is the need for actually interesting composition but folks who don't get that won't really care or pay attention to that. even in graphic design actually appealing/interesting looking visuals will generate more clicks or overall intrigue than something that looks crappy and generic
its one of the reasons why even for the most absurd ai generated stuff nothing beats thoughtful composition which regardless of how much data one of those generators has to work from it's never gonna size up to something human made (and then there's the ethical failings so )
as for typography there's probably enough folks here to give input on what may or may not work depending on genre of a work or it's themes. it's a big reason why many folks tend to advise against most default fonts for titles and suggest going for more unique ones similar to what you used in your second cover or otherwise and thankfully there's lots of sites to offer them for free or with affordable licenses
