This should be fun:
Probably the introduction to the capital city of the world, the main character is from a tiny area, so to describe a massive city in vivid detail, it is just very fun to go a bit too far into detail about things around them. I've always had a good hand at writing things too in detail.
My favorite would be the introduction of the main character's new fiance, she's so different to everyone around the main character. the story is futuristic where people had to adapt human DNA with animal to survive in the harsh world climate change caused and the main character has fish DNA where his fiance has snake DNA, so being able to describe her in extreme detail was fun.
I made up my own style of elves for this story, dragon elves, basically high elves with dragon blood, one of the main character's is one, half dragon, half elf, the character the book's point of view is in had never seen or met, so how they meet is a fun read and write.
Ah...this one, my horror fantasy, this novel is fun because the character the POV is in is the bad guy, they are bloodthirsty, ruthless, sadistic and in every possible form of the word, the villain. So to be able to just go crazy with the description of gore, get weird and detailed with the things they do and say, it's...a very different style compared to my others, but to be able to get to the Game of Thrones level of gore, it's a feat.
