From what you've said here, 2 sounds like the best option, if it's done carefully!
Like, cutting ALL character development and just being a series of events that lead into each other might make the story even more boring to you than it already is. But finding pieces that you can cut so that the main story gets a satisfying ending and the main character gets a satisfying arc, but you don't have to delve into bits that aren't interesting to you, seems like a solid direction.
I think only you know whether #1 is really an option for you at all. If it's miserable and boring but will only take you a few more months, maybe it's worth it. If it's gonna be another year's worth of updates spent on something you feel unenthusiastic about, that sort of thing can breed a lot of burnout and resentment and I don't really recommend it!!
I can only speak for myself, but as a reader I don't know that I'd enjoy method #3 -- if it ended up feeling like these big character moments were being rushed through in bonus strips, I think it might be better to not include them at all than to make it feel like they were being crammed hastily in and readers have been cheated out of the genuine moment. But if they can feel like a real part of the comic and the tone of those scenes fit, then heck, why not shake the format up?
