I'm not sure this counts as a mannerism, but Jinwoo stems a lot when he's nervous or upset, specifically by rocking back and forth, though it has yet to be shown.

For Apparent Secrets, the roommates have the most repeated phrases:

Iris: She's a big worry-wart, and prone to apologizing, so she's big on "I'm sorry."
Byxx: His repeated phrases are "Blast!" / "Demon's Teeth!" / "Gods old and new..."
Khazmine: She has short, robotic responses sometimes as a part of her Conversion, so she's likely to fall back on "Acknowledged" / "Correct" / "Confirmed" and the like.

He doesn't have too many "go-to" sayings, but he assimilates the others' speech patterns readily, so he's apt to repeat one of Khazmine's back at Byxx, much to the archfiend's continued surprise.

I should give a few to Warren and Mr. Cavendish...

Kattar has a tendency to shade his face, look up at the ceiling when he's annoyed, and hold his hands out like he's praying (both palms up, and hands together) when he's exasperated.

In "Lyra's Magnum Opus", Sana grew up in Hawaii (he's a "returnee", meaning a Japan native who grew up in America or somewhere else and then came back to Japan). He says some English words automatically, especially American slang. He says stuff like "cool" "tummy" "yum" "ouch". Whenever he says things in English, Tetsu will repeat it, so they're both going, "ouch tummy hurts", for example. This makes Sana laugh, so Tetsu will do it forever. They call it their "American-isms".

Essence has a habit of squinting. I'll add more about the different characters' quirks and nuances as more about the story comes out, but for now I'll note that, and her accent, which is pretty southern (southern USA) despite her having lived in Maryland, which is not considered very southern to most people, for quite some time.

Also Scarlet. I just love this character so much. She has a habit of smiling all the way up to her eyes, especially from behind her hair, which is very fluffy, and she piles it up on her shoulders, and likes to bury her face in it when she's laughing.

Avis has a very gentle and smiley way of talking that sounds very cheerful and soft. She's so well acknowledged by the female lead for her passive, patronizing way of speaking that the female lead calls her own attempts at being passive being "Avis-y." But she actually admires this, so...

Keanu has a photographic memory for fighting styles, but the trade-off is that he can't remember people's names.
So he goes with superficial nicknames,
like Short Shorts, Pinky, Eyebrows, Shades and Sandy.
Tried calling Leon Shorty once. Didn't end well.

( not really sure if this one counts as a saying) Higen has the saying "Copper coin for your thoughts?" as a way of asking "What´s wrong?" Ozwald´s mom had the saying "If you can't work fast, work smart" to say "Think outside the box and you may find a faster solution"

Lyza constantly insults her enemies to throw them off their game and like many shounen Anime, she yells her moves. When referring to side characters, she usually comes up with her own nicknames.

Since her brother is the mechanic or the fixer, "Oh yeah, Ethan's awesome... he usually fixes the stuff that I break."

Markin, their driver, gives her friendly jab calling her "Monkey!" from time-to-time. She doesn't take any offense, at all. Usually, she acts it to show how she's closer to both her brother and driver.

A bad idea I had was to go back to my earlier chapters and add more Irish mannerisms. Unfortunately it's important for the plot and I didn't knew or had time to properly research it.
