I suggest following Paper Cat Press, every week they release a huge list of comics/illustration/animation jobs and events, and there's almost always internships you can apply for.
There may not be a ton of them at this exact moment, most internships tend to be over summer or winter when intern-age students aren't in school/university, but you can keep your eye out for anything that does pop up on their lists.
