My mom made something that was just called pink beans and rice.
It's a very flavorful/wholesome/hearty meal and has the option to be vegetarian or vegan.
It's easy to make, it just has a lot of ingredients you may not have if you're not puerto rican like half of me is.
Put all of the following in a pot on med/low heat for 30-40 min (till everything is mush), stir/mash with a potato masher every once in a while till the onion/pepper/beans make a thickish sauce, serve over rice.
1/2 cup chopped green bell pepper (I just put a whole one in)
1/2 cup chopped onion (again I use a whole one bc I don't want to keep half an onion around)
2 cloves garlic
1 can drained pink beans (I use kidney beans sometimes, you can soak your own beans if you wanna be super healthy)
1 can of tomato sauce (8oz)
1 cup water (^8oz is a cup so just use the sauce can to measure the water)
1 packed of goya sazon
1 cube beef bullion (can be vegi to make it vegetarian)
1 tsp goya recito
2 tbs sofrito (there's a limited ingredient version you can get to make this meal vegan, the goya sofrito has pig fat in it)
Optional:
2 tbs oil (coconut, veg, or olive) it tells you to cook the vegetables in oil first but why if they're going to be boiled down anyway? So I skip it.
carrots
green olives
+An amount (??) of Fresh cilantro (not necessary, but pretty tasty)
**Also the recito/sofrito/bullion/sazon can be added to soups/stew or cooked with random meat or potato meals if you don't know what to do with the left overs, they're all just seasonings.
