I think it's because Harry Potter and Percy Jackson are for more towards kids, (and eventually go more mature as they go on) while romance hits the biggest category that has money: adults. So it's a mix based on age demos.

Why female manga fans came to consume shonen manga while most male manga fans don't read shoujo manga?

I think it just has to do with the style and popularity. I've read a few shoujo, but it's not my favorite. I'm also not totally into the big-eye-glitter look of many shoujo. List of shoujo I do like: Ghost hunter Ouran High School Host Club The Get Backers Young Miss Holmes Etc.

For most comics, you need at least an establishing shot so that the readers can fill in the blanks later on. You don't need to have the background present in every single panel, just enough to establish setting.
