There's a lot that adults can do to maintain neural plasticity - learning new things regularly, regular exercise, proper sleep. You can keep that childlike openness to new experiences by purposeful cultivation.
You won't feel quite like a child again - a lot of childhood is brand new experiences with nothing to compare to both positive and negative. A baby bumps her head against the wall - tears. It's literally the worst thing she's ever felt. An adult has context to know that some pains are worse.
Childhood also has a lot of negative experiences with lack of control and a general lack of skills across the board. Most adults forget how many skills have to be learned because we have long since mastered them. A high neuroplasticity adult will probably not have these problems - you've learned a lot. You know how to talk to people, to do several tasks, and so forth.
The only foods all six of my children can all agree on eating are chicken nuggets, french fries, and cheese pizza. Not until they grow up a bit are they able to enjoy complex flavors and textures.
Basically, anything good about being a kid (except cuteness) is maintainable into adulthood and can get even better, if you have the right attitude.
