a lot of the stuff i had in my old minecraft worlds were based on those kinds of videos and if you really wanna ramp things up i'd say give some basic redstone builds a try (doorbells and sliding doors wound up being the easiest starting point for me)
forgot i actually still had a few of these bookmarked but there a builds ive either already tried or considered putting my own spin on when i did decide to pick up the game again 
but it really is a limitless game in terms of things you can do just seek out whatever calls to you most (heck ive seen people make working computers so theres genuinely endless possibilities)
