For sketches (as in regular sketch) I use reused copy papers or just empty notebook, it's just a sketch that why I should invest buying a fancy special book for that.
For drawing, I buy a local brand of cold pressed watercolor papers or Faber Castell Drawing Book
(note: if you aim for professional quality, this is not recommended. I buy it because it's cheap enough and the paper thickness is around 200 gsm.)
I'm the type of person who can't afford and don't prioritize buying professional grade or fancy supply because I'm just a hobbyist, so I can't help.
If you want real recommendations, some people I know use Canson XL sketchbook.
There are many variations: mixed media, watercolor, extra blanc, aquarelle, recycled paper, bristol paper, marker, black paper, and I think more (but all variations depend on availability in your place).
