I'm going to be really boring and say Final Fantasy - but only because you mentioned all the other ones I was going to say. >.< Layton is amazing, as is Ace Attorney - and while I kind of suck at Zelda, I do love both Ocarina of Time and Majora's Mask.
I'm right in the middle of re-playing Final Fantasy IX - for literally the 10th time. I just love it so much it's ridiculous. I also nabbed a bunch of the older FFs during PSN's latest sale.
I like JRPGs in general, but I tend to prefer the older ones, or ones that feel similar in atmosphere. I like the fairytale aspect of it - the grand fantasy worlds, things like that. I am not too fond of the ones that take place in more scifi-worlds, because they tend to feel more drab and grey, and that's not really what I'm after in my games.
What else... well. Insomniac's first Spyro the Dragon-trilogy was absolutely wonderful, and I challenge ANYONE to outrace me in Crash Team Racing for the PS1.
