In an upcoming arc of my comic, the story takes place in Barbados, and involves ghosts. I was thinking of having a scene where several gods of the dead have a meeting, including Baron Samedi.
I know that he's been misrepresented in a lot of media (like voodoo as a whole), so how do I write him in a respectful way?

Make him as human as possible. Best example I can think of is Grim from The Grim Adventures of Billy & Mandy. Dr. Facilier from the Frog Prince would also be a good reference. Someone born in the culture would know more, though.

I feel like the best way to write respectfully is to do lots of research, if it’s a figure from another culture or religion, see how they were depicted by the people in that culture/practicing that religion, but also you know, have your own spin on it, i think so long as you write something with respect and appreciation, it’ll shine thru your writing.
