I would stick to two. I think it's easier to be productive when you have less projects, so you can focus all your energy into one. If you do too many projects, motivation is lost. I would save your third idea for another time.

Wow! That's great for you! A little advise, keeping a schedule helps you stay on track, but don't overwork yourself by thinking that since you are working with yourself as your boss, you should be working ALL THE TIME. Cuz that just makes you less productive.
Needed a place to put my daydreams 
I want an AMAZING INTERESTING, WELL PACED, EXCITING STORY. The art is important, BUT STORY COMES FIRST.
I would probably just stop where you think the story should end. When I upload story parts on my blog, I stop the story where there's a small cliffhanger, or just something exciting, or just because it feels right. I don't think comics would be different.

there are those stories where its just fun to imagine, but not write, you know?
I think that the first one is better, but maybe if you took the second one and make the background a different solid color, it would work too.
I don't know if your character i supposed to be pink, but I will say using a different brush might help.
