And Madoka Magica, and Noir's sister series, Madlax and El Cazador, and MaiHIME and all of its spawn, which are kind of trashy anime but have incredible soundtracks~. There are probably more I've heard of that I can't remember; the lady works hard! ^^
Anyway, apart from Kajiura, I have to say I really like Yoshiaki Fujisawa. I've already watched two anime that feature his work, and not only is it beautiful, it's very recognizable. There's just something in the way he uses orchestra to create that 'magical' sound...
I listen to more game OSTs than I do anime OSTs (and both make up the majority of my audio consumption, which makes it really hard to answer the question "what's your favorite music genre/artist"??) but I also think that soundtracks from kids' anime are largely underappreciated. It's like people just don't expect them to be worth listening to, simply because the target audience is too young to pay attention to things like that.

It's so beautiful and bittersweet (my favorite part starts around 1:16)...I think it might have been from one of the movies; because I don't remember hearing it, and I can't imagine what kind of character/event they used it for...maybe I should look into watching the series again~.
Now imagine 5 SEASONS worth of music of that quality, and no one really giving a damn (despite how famous OD is). The same goes for Pretty Cure; its composers are really creative and deserve more love. Sometimes their work is a season's only redeeming quality... ^^;
