My favourite super-easy to make thing is every hipster's fave: Avo Toast.
Get a ripe avocado, cut it open, remove the stone, scoop out the insides into a bowl and mash it up into a smooth, hummus-like consistency. Stir in a pinch of salt and, if you like, a sprinkle of chilli flakes.
Now make a couple of slices of toast and butter them (or use dairy free equivalent to butter if you're vegan or you have a milk allergy like me).
Put the avocado onto the toast and spread evenly. Cut the slices in half to make it easier to eat if they're big slices of bread.

Quick, easy, delicious and full of good nutrients like potassium and healthy fats that reduce cholesterol! If you want to be extra decadent and you're not vegan, you can add a fried or poached egg, or some rashers of bacon or slices of prosciutto on there for protein.
