Out of all characters on the cover of Morpho Mons, 4 of them are Bi!

Randall is the first character to be explicitly mentioned as Bisexual in a more recent chapter.
All of them except for the MC Toby (who is gay) are bi!

I'm a bit late but check out Minding Empathy it's a modern fantasy featuring mostly LGBTQ+ characters!
The main character, Eleanor, is pansexual, her best friends Carter and Avery are both bisexual!

The MC, Carmen, in Wild Nights, Hot and Crazy Days is as gay as the day is long, but there are a few prominent bi characters including Aiden and Bruce, and a poly aro character named Colin. Oh, and these are real people. This series is finished, so it's good for a binge read (mature audiences!)

The MC and ML would probably be considered demi.
