Not a lot. Argentina is pretty isolated mostly because the old guard is too enamored with a glorious past most of them weren't even part of. There is a couple of high profile Wrestlers from Argentina that went to Peru (One of them even wrestled against Zack Saber Jr.)
In South America I think that the Juggernauts in wrestling are Peru and Chile. Bolivia has their own promotions.
Hopefully the current generation in Argentina will break through the chains of the past holding the whole business back. We recently had a large scale event that involved wrestlers from three promotions called "Torneo Condor" (Condor Tournament)
It wasn't a high budget affair, but it's unmatched when it comes to sheer number of wrestlers involved, the editing was pretty solid and the fight level was consistent. It had some variety from some comedy matches (I was involved in arguably the funniest with spots focused on Covid) some hard hitting matches and some spot fests. The final match was pretty impressive.
There is also Zona de Lucha a more fictionalized version of a wrestling show with an overarching narrative, a low budget more cinematic Lucha Underground almost
