This is my cheat meal for dinner...
A rotisserie chicken, shredded
Shredded cheddar
Sliced Jalapeno
Sliced Radishes
Chopped cabbage
Chopped White Onion
Chopped Cilantro
Chipotle Ranch (Or ranch dressing and salsa)
Taco Seasoning
Corn Tortillas
I usually get the packaged taco season. I will shred a rotisserie chicken and add it to a pan with some water. Add the taco season on top and stir occasionally so that all the chicken gets flavored and the water evaporates.
Chop and slice the veggie while the chicken cooks. Make extra for tomorrow!
When the chicken is getting heated and when the water is evaporating, start warming the corn tortillas in a pan. You can heat them for 15 seconds on each side once the pan is hot. CA trick - Dampen some paper towels and slip tortillas in between them. Heat in a microwave for 15-30 seconds.
Once the tortilla is warm, spread the chipotle sauce on the tortilla. Add the chicken next. Then add the cheese so it can melt slightly. Add the veggies next (cabbage, onions, raddishes, jalepeno, cilantro).
Fold up in a halve.
