For me I need just two things: Pasta and tons of butter. The specifics don't matter, the other ingredients depend on my mood and what's in the fridge. But I'll make a whole pot of it and I'll probably eat it all. My favorite iterations are just capers and butter and lime sauce. I just quickly cook some garlic, onion, cream, and lime juice (in that order) into a simple sauce and toss the pasta in, then top with tons of coriander and a squeeze of lime juice. A cuisine crime? Probably, still delicious. Limes are my favorite and I love to figure out ways to use them. Whenever I make it my sister always asks me for some so I can't be that bad of a cook XD
As for things I don't personally make, in my family we have a recipe for a chard casserole which is one of my favorite dishes ever, witch a delicious, spongy cheese layer on top. I've never seen anyone else make it, so I guess it's a family thing. The golden brown bits are the best. I also love the masa atole my maternal grandma makes, which is basically just corn masa diluted in some water, boiled, and sweetened to taste, and her squash blossom quesadillas are perfection. On my father's side, my paternal grandmother makes some mean tamales that I adore. Whenever she makes, she makes a ton of them and gives them to all of her children to take home, so we have delicious tamales for days.
