I can imagine that people would still be after them if they can retire, but CAN they retire in the first place?

Assassins are pretty much exclusively freelance. If they didn't manage to make a ton of enemies (fairly easy if they do their job well and don't get caught), then it depends on how much they made. Assassinations will cost a lot, but it's not exactly a day-to-day job.

The profession requires anonymity. An assassin as a rule would have one or several assumed identities and after retirement live out a life of quiet comfort on an obscure island, quite content from his ill gotten gains.

I mean, I do have a character in my story who used to be a bounty hunter and later retired sooo, I guess it is possible. I mean, they might still have to face repercussions (especially if they made enemies), but I do believe assassins can retire if they choose to.
