I'm with you here I'm watching and reading fiction and fantasy to be entertained, not told my race is too distracting in fictional space. Gimme that beautiful rainbow world of Brandy's Cinderella.
The moment a story or series is labeled as fantasy I actually expect blind casting and liberal use of multiple races bc why not? If magic is real then I don't see why a mixed population would be so distracting, grey-green monster people are fine, and magical races of elves and dwarves are sweet, but ethnically diverse versions of magical races are too distracting bc the fantasy world has to be governed by the real world? That feels like such a limiting way to experience fantasy where the point of the genre is to create a world where impossible or improbable is commonplace and normal.
